    Cook the potato in salted water at 100°C (212°F) until very tender.

    Melt the unsalted butter over medium heat and cook the leek and carrot until soft and sweet.

    Drain the potato well and mash it with the whole milk, unsalted butter, salt, and white pepper.

    Fold the softened leek and carrot into the mashed potato and keep warm over low heat.

    Cook the pork sausage over medium heat until browned and the center reaches 71°C (160°F).

    Serve the mash with the pork sausage and Dijon mustard.
