Pudding

  • 0.9kg
    Sweet Potato (grated)
  • 80g
    All-Purpose Flour
  • 10g
    Garlic (minced)
  • 1pcs
    Scotch Bonnet Chili (finely chopped)
  • 5g
    Fresh Thyme
  • 4g
    Salt
  • 2g
    Black Pepper
  • 20ml
    Vegetable Oil

    Hot Sauce

Method

    Place the pork shoulder in the water and simmer until fully tender and at least 71°C (160°F).

    Drain the pork, let it cool until easy to handle, then cut it into bite-size pieces.

    Combine the pork with the lime juice, distilled white vinegar, onion, cucumber, salt, and black pepper.

    Transfer the souse to a shallow container and refrigerate within 2 hours. Chill until thoroughly cold and the flavors have melded.

    Heat the oven to 180°C (350°F) and oil a baking dish with the vegetable oil.

    Combine the sweet potato, all-purpose flour, garlic, scotch bonnet chili, fresh thyme, salt, and black pepper.

    Press the mixture into the prepared dish and smooth the top.

    Bake until firm, browned around the edges, and cooked through the center.

    Slice the warm pudding and serve it with the chilled souse and hot sauce.
