    Rub the flying fish with the lime, then season with the salt and black pepper.

    Set the flying fish aside while you start the sauce.

    Heat the vegetable oil in a wide pan over medium heat. Add the onion and cook until softened.

    Stir in the garlic and scotch bonnet chili and cook briefly until fragrant.

    Add the tomato, fresh thyme, seasoning sauce, and water. Simmer until the tomato breaks down and the gravy thickens slightly.

    Nestle the flying fish into the sauce, spoon some sauce over the top, cover, and cook gently until the fish reaches 63°C (145°F), is opaque, and flakes easily.

    Bring the water to a simmer in a separate pot. Add the okra and cook until tender and the liquid feels slightly thickened.

    Stir in the salt, then sprinkle in the cornmeal a little at a time, stirring constantly to prevent lumps.

    Cook over low heat, stirring often, until the cou-cou is smooth and pulls away from the sides of the pot.

    Beat in the salted butter until glossy, then serve hot with the flying fish and sauce.
