    Cauliflower (finely chopped)

    Onion (finely chopped)

Method

    Mix the all-purpose flour with the salt. Rub in the vegetable oil, then add the water and knead into a firm, smooth dough. Cover and let it rest.

    Warm a spoonful of the vegetable oil in a pan over medium heat. Add the cumin seeds and let them sizzle.

    Add the onion and cook until soft. Stir in the garlic and fresh ginger and cook until fragrant.

    Add the potato, cauliflower, green peas, coriander powder, turmeric powder, chili powder, and salt. Cook until the vegetables are tender and the filling is dry enough to hold its shape. Cool completely.

    Divide the dough into equal portions, roll each portion into a thin circle, cut each circle in half, and shape each half into a cone. Fill and seal the edges well.

    Heat the remaining vegetable oil to 175°C (350°F). Fry the pastries over medium heat until deep golden and crisp all over.

    Drain briefly and serve hot.
