Method

Mix the all-purpose flour, baking powder, salt, white sugar, cinnamon powder, and nutmeg powder in a bowl.

Rub the unsalted butter into the dry ingredients until the mixture resembles coarse crumbs, then stir in the whole milk to make a soft dough.

Spread the dough into a rectangle and scatter the guava evenly over the surface.

Roll the dough tightly into a log and wrap it securely for steaming.

Bring the water to a steady simmer, place the wrapped duff over the steam, and cook until the dough is firm and tender, about 60 minutes.

Melt the salted butter in a saucepan, stir in the brown sugar, then add the whole milk and simmer gently until smooth.
