- 1pcsEgg
- 900mlWater
- 80gWhite Rice (rinsed)
- 200gChickpeas (soaked overnight and cooked until tender)
- 200gSpinach (finely chopped)
- 20gFresh Dill (finely chopped)
- 15gFresh Mint (finely chopped)
- 20gFresh Coriander (finely chopped)
- 10gSalt

Method

Whisk the plain yogurt and egg together until completely smooth.

Gradually whisk in the water, then add the white rice and place the pot over medium-low heat.

Cook gently, stirring often, until the white rice is tender and the mixture is steaming but not boiling hard.

Stir in the cooked chickpeas, spinach, fresh dill, fresh mint, and fresh coriander.

Season with the salt and simmer very gently just until the herbs are softened and fragrant.
