Method

Pat the grouper dry and season it with the salt and black pepper.

Coat the pieces lightly in the all-purpose flour, shaking off the excess.

Heat the vegetable oil to 180°C (350°F) and fry the grouper until golden and the center reaches 63°C (145°F). Drain on a rack or paper.
