Pastry

  • 400g
    Phyllo Dough (thawed)
  • 300g
    Walnuts (finely chopped)
  • 4g
    Cinnamon Powder
  • 180g
    Unsalted Butter (melted)

Syrup

  • 220g
    Honey
  • 150ml
    Water
  • 20ml
    Lemon Juice

    Preheat the oven to 180°C (350°F).

    Mix the walnuts with the cinnamon powder.

    Brush a baking dish with some of the unsalted butter, then layer in sheets of phyllo dough, brushing each sheet lightly with more unsalted butter.

    Scatter the walnut mixture between several layers, then finish with a top layer of phyllo dough brushed with unsalted butter.

    Cut the unbaked pastry into diamond or square portions.

    Bake until the pastry is deep golden and crisp on top.

    Simmer the honey, water, and lemon juice together until smooth and lightly thickened.
