- 700gPotato (peeled and cut into large chunks)
- 400gTomato (cut into wedges)
- 200gOnion (sliced)
- 200gRed Bell Pepper (cut into chunks)
- 12gGarlic (crushed)
- 2pcsBay Leaf
- 10gSalt
- 3gBlack Pepper
- 1.2lWater
- 20gFresh Parsley (finely chopped)

Method

Place the beef brisket, onion, tomato, red bell pepper, garlic, bay leaves, salt, and black pepper in a heavy pot.

Pour in the water and bring the stew to a gentle boil over medium heat.

Reduce the heat to low, cover, and simmer until the beef brisket is almost tender.

Add the potato, cover again, and continue cooking until the potato is soft and the beef brisket is fully tender.

Discard the bay leaves, sprinkle the stew with fresh parsley, and serve hot with some broth in each bowl.
