- 250gWhite Rice (rinsed)
- 600mlWater
- 80gUnsalted Butter
- 80gRaisin
- 120gDried Apricot (chopped)
- 120gWalnuts (chopped)
- 50gHoney
- 3gCinnamon Powder

Method

Preheat the oven to 190°C (375°F).

Place the prepared pumpkin in a baking dish and set it aside.

Cook the white rice in the water until just tender, then drain any excess liquid. Use the rice immediately in the filling rather than leaving it at room temperature.

While the white rice is still warm, stir in the unsalted butter, raisins, dried apricot, walnuts, honey, cinnamon powder, and salt.

Fill the pumpkin with the rice mixture and place the lid back on top.

Bake until the pumpkin is fully tender when pierced with a knife and the filling is fragrant and hot.

Bring the whole pumpkin to the table, then cut it into wedges and spoon out the sweet rice filling with each serving.
