- 350gHominy (dried, soaked overnight, and drained)
- 350gBeef Brisket (cut into large pieces)
- 350gPork Shoulder (cut into large pieces)
- 250gChorizo (sliced)
- 450gPumpkin (peeled and diced)
- 180gYellow Onion (finely chopped)
- 120gCarrot (finely chopped)
- 10gGarlic (finely chopped)
- 4gPaprika
- 2gAjí Molido Chili Powder
- 10gSalt

Method

Place the hominy, beef brisket, pork shoulder, and water in a large pot and bring to a boil. Skim off any foam, then lower the heat to a gentle simmer.

Cook until the meats begin to soften and the hominy starts to swell.

Add the yellow onion, carrot, and garlic, and continue simmering until the vegetables soften.

Stir in the chorizo and the pumpkin. Cook until the pumpkin is very tender and begins to break down.

Add the paprika, ají molido chili powder, salt, and black pepper.

Mash some of the softened pumpkin against the side of the pot to thicken the stew, then simmer until the broth is creamy and the meats are fully tender.
