Method

Place the salted cod in a saucepan with the water. Bring to a boil, then simmer until the fish is tender enough to flake easily. Drain, cool slightly, and remove any bones or skin.

Heat the vegetable oil in a skillet over medium heat. Add the onion, garlic, and bell pepper and cook until softened.

Add the tomato and scotch bonnet chili and cook until the tomato is softened and lightly saucy.

Fold in the flaked salted cod, season with the black pepper, and cook just until heated through. Stir in the lime juice and remove the scotch bonnet chili before serving.

Heat the vegetable oil to 175°C (350°F) in a frying pan. Fry the plantain slices until golden on both sides, then drain and serve with the saltfish.
