Lobster
- 1.2kgSpiny Lobster (split lengthwise)
Butter
- 80gUnsalted Butter
- 20gGarlic (finely chopped)
- 30mlLime Juice
- 10gFresh Parsley (finely chopped)
- 6gSalt
- 2gBlack Pepper
- 3gPaprika

Method

Preheat the oven to 200°C (400°F). Arrange the spiny lobster halves cut side up on a baking tray.

Melt the unsalted butter in a small pan over low heat, then stir in the garlic, lime juice, fresh parsley, salt, black pepper, and paprika.

Spoon the butter mixture over the spiny lobster, making sure some of the garlic and herbs sit on the meat.

Roast until the spiny lobster meat is opaque and just firm and reaches 63°C (145°F), about 12 to 15 minutes.

Serve immediately with the hot butter from the tray spooned over the top.
