    Rinse the red beans and place them in a pot with the water and bay leaves.

    Bring to a simmer and cook until the red beans can be crushed easily between two fingers.

    Warm the palm oil in a separate pan over medium heat.

    Add the onion and cook until softened, then stir in the garlic.

    Add the tomato and cook until it forms a thick sauce.

    Stir in the cooked red beans with some of their cooking liquid, then season the beans with the salt and black pepper and keep warm.

    Preheat a grill or broiler to 220°C (425°F).

    Rub the mackerel with the extra virgin olive oil, then season with the salt and black pepper.

    Grill the mackerel until the mackerel reaches 63°C (145°F) and flakes easily.

    Roast the plantains at 200°C (400°F) until soft and lightly caramelized.
