Season the catfish with the salt, black pepper, and lemon juice.

Warm the palm oil in a pot over medium heat.

Add the onion and cook until softened.

Stir in the garlic and cook briefly until fragrant.

Add the tomato and cook until it breaks down into a thick base.

Add the dried fish and water, then simmer so the broth takes on its flavor.

Add the catfish and cook gently until it reaches 63°C (145°F) and flakes easily.
