    Wash the pot, whisk, strainer, and storage container thoroughly, then rinse the storage container with boiling water and let it air-dry.

    Bring the water to a boil in the clean pot over medium-high heat.

    Reduce the heat and simmer for 15 to 20 minutes, stirring often, until the mixture thickens slightly.

    Cool the drink promptly in a cold-water bath, stirring occasionally, and refrigerate it within 2 hours.

    Stir in the white sugar until dissolved, then strain if desired.

    Serve cold over the ice and keep refrigerated. Discard any portion left at room temperature for more than 2 hours and use the chilled drink within 2 days.
