- 250gWhite Sugar
- 400mlCoconut Milk
- 100gCoconut Meat (finely grated)
- 20gUnsalted Butter
- 5mlVanilla Extract
- 60mlWater

Combine the white sugar and water in a saucepan and heat until the sugar dissolves into a clear syrup.

Add the coconut milk, coconut meat, and unsalted butter, then simmer gently while stirring.

Whisk the egg yolks until smooth in a bowl.

Slowly add some of the hot coconut mixture to the egg yolks while whisking to temper it.

Pour the tempered egg yolk mixture back into the pan and cook over low heat, stirring constantly, until the custard thickens and reaches 71°C (160°F).

Stir in the vanilla extract.
