- 250gOkra (trimmed)
- 300gTomato (finely chopped)
- 180gOnion (finely chopped)
- 12gGarlic (crushed)
- 150gRed Bell Pepper (finely chopped)
- 30gTomato Paste
- 8gHot Chili (crushed)
- 2pcsBay Leaf (whole)

- 650mlWater

Method

Season the chicken with the salt and black pepper.

Warm the palm oil in a heavy pot over medium heat.

Add the onion and cook until soft and lightly golden.

Stir in the garlic and hot chili and cook briefly until fragrant.

Add the tomato paste, tomato, and red bell pepper, then cook until the vegetables break down into a thick sauce.

Add the seasoned whole chicken and turn it well in the sauce.

Pour in the water, add the bay leaves, and bring to a gentle simmer.

Cover and cook until the chicken is tender and the thickest pieces reach 74°C (165°F).

Add the okra and simmer uncovered until it is tender and the sauce becomes silky.
