- 400gQuince (peeled and chopped)

Sauce
- 2pcsEgg Yolk (pasteurized)
- 10gGarlic (finely grated)
- 250mlExtra Virgin Olive Oil
- 15mlLemon Juice

Method

Simmer the quince in the water until very soft. Drain well and mash or blend the fruit until smooth, then let it cool.

Whisk the egg yolks, garlic, and salt together in a bowl.

Whisk in the cooled quince purée, then slowly drizzle in the extra virgin olive oil while whisking constantly until the sauce thickens and emulsifies.

Stir in the lemon juice, taste, and chill the sauce before serving.
