- 20mlExtra Virgin Olive Oil
- 50gUnsalted Butter
- 10gGarlic (lightly crushed)
- 10gFresh Parsley (finely chopped)
- 1pcsLemon (cut into wedges)
- 8gSalt
- 2gBlack Pepper

Pat the trout dry and season both sides with salt and black pepper.

Heat the extra virgin olive oil in a large frying pan over medium-high heat. Add the trout and cook until the surface is golden.

Add the unsalted butter and garlic to the pan. Tilt the pan and spoon the foaming butter over the trout until it reaches 63°C (145°F) and flakes easily.

Scatter over the fresh parsley and serve immediately with the lemon wedges.
