Method
Follow each step in order. Ingredient names are highlighted as you go.

Heat the vegetable oil and unsalted butter in a pot over medium heat. Add the onion and cook until soft, then stir in the garlic.

Add the chicken thigh and cook until lightly colored. Season with the turmeric powder, ginger powder, salt, and black pepper.

Pour in the chicken stock and water, then add the saffron threads, cinnamon stick, and chickpeas. Bring to a gentle boil, lower the heat, and simmer until the chicken thigh is tender and reaches 74°C (165°F).

Add the carrot and cook until almost tender. Add the zucchini and simmer just until it softens but still keeps its shape.

Stir the tlitli pasta into the broth and cook until it is tender and has absorbed some of the liquid.

Remove the cinnamon stick. Serve the pasta with the chicken, chickpeas, and vegetables, then finish with the almonds.
