- 3pcsEgg (beaten)
- 15gFresh Mint (chopped)
- 15gFresh Parsley (chopped)
- 8gSalt
- 2gBlack Pepper
- 20mlExtra Virgin Olive Oil
- 600mlWater

Method

Cook the white rice in the water until tender. Spread it in a shallow tray to cool quickly, then use it as soon as it reaches room temperature or refrigerate it promptly.

Mix the cooled white rice with the eggs, fresh mint, fresh parsley, salt, and black pepper until evenly combined.

Brush a baking tray or muffin tin with the extra virgin olive oil and shape the mixture into small compact balls.

Bake until the rice balls are set and lightly golden at the edges, about 20 minutes at 200°C (400°F). Serve warm.
