Casserole
- 700gLamb Shoulder (cut into large pieces)
- 150gWhite Rice (rinsed)
- 10gGarlic (crushed)
- 40gUnsalted Butter
- 30mlExtra Virgin Olive Oil

Method

Heat the extra virgin olive oil in a heavy pan over medium-high heat and brown the lamb shoulder well on all sides.

Add the garlic, salt, and black pepper, then pour in the water. Cover and simmer gently until the lamb shoulder is nearly tender.

Stir the white rice and unsalted butter into the casserole mixture and cook just until the white rice begins to swell but is still firm.

Whisk the plain yogurt, eggs, all-purpose flour, and salt until smooth.

Transfer the casserole mixture to a baking dish, spread it evenly, and pour the topping over it.

Bake until the topping is set and lightly golden, about 35 minutes at 180°C (350°F). Let it rest briefly before serving.
