Dough
- 600gRye Flour
- 120gMalt Flour
- 500mlSour Milk
- 120gDark Syrup
- 25gFresh Yeast (crumbled)
- 10gSalt
- 5gBaking Soda
- 120mlWater (lukewarm)

Method

Warm the water until lukewarm and dissolve the fresh yeast in it.

Stir in the sour milk and dark syrup.

In a separate bowl, mix the rye flour, malt flour, salt, and baking soda.

Add the wet mixture to the dry ingredients and stir into a very thick, sticky dough. Cover and let it stand in a warm place until slightly puffed.

Preheat the oven to 175°C (350°F) and grease a 23 x 13 cm (9 x 5-inch) loaf pan with the unsalted butter.

Scrape the dough into the pan, smooth the top with a wet spoon, and bake for 75 to 90 minutes, until the loaf is firm and an instant-read thermometer inserted in the center registers at least 93°C (199°F).

Cool the bread completely before slicing so the crumb can set.
