- 200gLentils (rinsed)
- 200gRed Kidney Bean (cooked)
- 180gOnion (finely chopped)
- 10gGarlic (finely chopped)
- 220gSpinach (roughly chopped)
- 30gFresh Coriander (finely chopped)
- 20gFresh Dill (finely chopped)
- 40mlVegetable Oil
- 1.8lWater
- 12gSalt
- 3gCumin Powder
- 3gCoriander Powder
- 250gPlain Yogurt
- 3gDried Mint (crushed)

Method

Heat the vegetable oil in a soup pot over medium heat. Add the onion and cook until golden.

Add the garlic, cumin powder, coriander powder, and salt, and stir until fragrant.

Pour in the water, add the lentils, and simmer until the lentils are almost tender.

Add the red kidney beans and the wheat noodles and continue simmering until the noodles are cooked and the soup thickens slightly.

Stir in the spinach, fresh coriander, and fresh dill and cook just until the greens wilt.

Serve the soup hot with a spoonful of plain yogurt and a sprinkle of dried mint on each bowl.
